Recipe: White Bean Chicken Chili
- 1/2 c. diced onion
- 1/2 c. diced celery
- 1-2 T. butter and oil (olive or coconut)
- 1 lb. boneless chicken breast or thighs, cut up into bite-sized pieces
- 1-15 oz. can great northern beans, rinsed and drained
- 1-4 oz. can diced green chilis
- salt and pepper to taste
- 1 c. organic sour cream
In a large pan, saute onion and celery in butter and oil for a couple of minutes. Add chicken and continue sauteeing until chicken is done and no longer pink inside. Add beans, chilis, salt, pepper. Stir well and heat through. Add sour cream right before serving mixing it in thoroughly.
