Easy Apricot Mustard Chicken
1 lb. chicken breast
2 T. fruit only apricot preserves
2 T. dijon mustard
Cut up chicken into bite-sized pieces. Saute in skillet with olive oil, butter, coconut oil or a combination of these. After the chicken is thoroughly cooked add the apricot preserves and mustard to the skillet and mix well. Serve with plenty of vegetables or a salad on the side.
