- 1 1/2 lb. cauliflower
- 1/3 c. cream
- 4 oz. cream cheese
- 2 minced garlic cloves
- 1/2 t. onion powder
- 1 t. parsley flakes
Simmer cauliflower in 1 inch of water and cream. After 12 minutes or when soft, drain and mash. Blend or food process all the other ingredients into the cooked cauliflower until smooth. Makes about 6 servings.
Cauliflower Buying Guide:
When purchasing fresh cauliflower look for clean, heavy, compact head with white flowerets and green crisp leaves. Avoid heads with discolorations. Available all year with peak in September through December. Refrigerate in airtight container.
