I am going to do a series of posts on some different leafy greens. This week I am spotlighting kale. Kale is one of the top dark leafy greens to eat for nutritional value. It makes into lots of top ten foods or top ten vegetable lists.
Kale is very high in Vitamin K, Vitamin A, Vitamin C, carotenoids and flavonoids. It’s got a healthy dose of fiber and omega-3 fatty acids as well.

I have not tried all of these recipes. I can not vouch for all of their good taste. Also some ingredients may not be optimal. Please make your own healthy substitutions as needed. But for the most part I considered the ingestion of these wonderful leafy greens worth any other small ingredient problems.
