Hearty Tomato Soup Continuing my series of posts on hearty and healthy soup recipes—this week is tomato soup. Ingredient notes: Contains dairy. Try to find the freshest and healthiest ingredients as possible. Look for organic butter, milk, cream cheese, canned goods. Especially look for tomato soup without MSG. Ingredients: 2 t. butter 1/2 c. finely chopped onion 1 clove garlic, finely chopped 1/2 t. paprika 1/2 t. basil 6 oz. softened cream cheese 1 1/4 c.milk 2 cans (10 3/4 oz. each) condensed tomato soup 2 cans (16 oz. each) whole tomatoes, undrained Directions: Saute onion and garlic in butter for a few minutes. Cabbage Soup Here’s another soup recipe for those cold nights ahead. Ingredients 6 c. finely chopped cabbage 1 c. finely chopped bacon 3/4 c. finely chopped onions 1/4 c. flour 4 c. chicken broth (without MSG) 1/2 c. finely diced carrots 1 1/2 c. finely diced potatoes salt and pepper to taste 1 t. crushed caraway seeds 1 T. white-wine vinegar Directions Cook the bacon in a pan. Add onions and cook, stirring often, until the onions are transparent. Sprinkle in the flour and stir. Add the broth, stirring with a wire whisk.
